Rich in iron, Eggplant (Baigan) is a very healthy vegetable and is helpful in enriching the Hemoglobin of the body. It also helps in neutralizing the effect of excessive starch found in potatoes. Ingredients 2 cups cut potatoes pieces, (about 3 medium potatoes) Method In a large corning casserole put potato and eggplant pieces. Add salt, turmeric and red chili powder. Mix and microwave for 20 minutes. Meanwhile, heat oil in a nonstick pan and fry onions, cumin and ginger. When onions turn gold, add tomato and garam masala. Cook until smooth. Pour this paste on Alu-Baigan and microwave again for 2 minutes. |
